Hi, in the supermarket, there is packaged frozen turtle or "shell fish". I heard that turtle is very beneficial to health. Does anyone know how to make turtle soup? Do you dunk the whole turtle to the pot or do I need to use a hammer and break the shell??

Anyone know? Thanks.

Any old soup recipe will work for (snapping) turtle soup. The main problem with turtle soup is cleaning the turtle. You have to be certain that every last speck of fat is removed from the meat before cooking. This is not too difficult because the fat is between the skin and the flesh.

To butcher a turtle you start by chopping off the turtle’s head. Be careful because the head will still bite even after it is removed from the body and the body will still crawl away after the head is removed. Turtles don’t die right away.

When the body stops trying to crawl away, dip it in boiling water and scrape off the exterior layer of skin, including the shell. The result will be a bright white carcus, compared to the muddy brown-green you started with.

Next step is to remove the shell. Cut along grove on each side between the front and back legs. It is the narrowest part of the shell. The tail, neck and all four legs are attached to the top of the shell. Remove from shell and you have the bulk of the meat. However, there will be some meat on the bottom shell and top shell.
It is at this point that you remove the fat. Just roll back the skin and with a paring knife and your index finger scrape out the fat.

    1½ qts strained chicken broth
1lb turtle meat (without bones or gristle)
    3 tbsp chicken fat
    1medium onion
    Salt and pepper to taste
    1 tbsp chopped parsley
    5to 6 thin slices lemon
Prepare a richly flavored chicken broth seasoned only with salt
    Strain
Cut turtle meat into small dice
Brown slowly in the chicken broth fat (or butter)
Add chopped onion and saute’ slowly over medium heat until onion is soft and yellow.
Add turtle, onion, seasoning and any fat to chicken broth
heat to boiling, reduce heat and simmer gently for 10 mim.
Serve with a sprinkling of parsley on each bowl of soup and a paperthin slice of lemon floated on top.

    Enjoy! ~:)

Carefully remove the shell with plyers. That is very important. if u remove the shell to fast the meat with be ruined. it is a slow and tedious process. then take the meat and let it bask in the sun for 4-5 hours. this dries the meat and makes it edible for humans. turtle is poisonous to humans if not dried out in the sun. Then prepare the meat anyway u like.
