How long do I bake very large sweet potatoes for sweet potato pies?

Have two very large sweet potatoes. How long to bake them for and how do I know if they are done?

Bake them at 350 degrees for about an 1hr 1 1/2 hr depending on your oven. You can take a fork and poke holes in them also. They will be very tender when done. Another alternative is to boil them until they are soft (1 hr), that may be a little easier.

Put them in the microwave for about 3 minutes, then feel them to see if they’re done. If not, put them back in for 30second -1 minute intervals until soft.

You dont bake them. Put em in a pan with your other ingredients and cook them there on the stove until the are mashable….you cook the crust a lil bit before adding the filling and put back in oven. You dont cook the entire pie in the oven its not like the ones you buy from the store. If you do it your way you will have excess water and a soggy crust.
