How do heat activated color changing type things work?

I got a Harley Davidson coffee cup and when you put some hot liquid in it the flames will go from a greyish-matte color to orange flames.
And it made me question, How do these type things work?
What makes them change colors?
How do they do that?

It is almost certainly what is called a thermotropic liquid crystal:
