What I want to know is…. What if the car LANDS IN THE WATER UPSIDE DOWN? How would I go about escaping it? Should I keep my seatbelt on for a while, or should I take it off just to be safe?

Immediately try to open a door or a window. Next, remove your seatbelt.
Keep the seat belt on, it will keep you from getting banged up or possibly rendered unconscious till you are ready to make your escape. If you are really paranoid about this you can take a basic offshore survival course. They teach you escaping from a helicopter, helicopters are top heavy and usually flip upside down. The simulator is in a pool, they strap you in roll you upside down, you have to get unbuckled and escape.
Keep your seat belt on until you have an escape route.
Jack.
I’d take the seatbelt off immediately as the car hits the water and scurry out the window.
